ALOO POHA
(Beaten Rice with
Potatoes)

Cooking Method
 |
Soak the beaten rice in water till it is soft, but
not mushy. Gently squeeze out excess water and
spread the beaten rice in a wide plate. Sprinkle
with turmeric powder, sugar and salt. |

Sprinkle ¼ cup of warm water on desiccated coconut
and leave aside for 10 minutes. |

Boil, peel and cut potatoes into small cubes and
sprinkle with salt to taste. |

Heat the oil in a kadai and season with mustard,
cloves cinnamon. Add green chillies and curry
leaves, fry for few seconds. Add onion and fry till
light brown. |

Add beaten rice, potato and desiccated coconut. Mix
well, cover and leave on low heat till heated
through. Mix in lime juice and garnish with
coriander leaves. |
