ALOO POHA

(Beaten Rice with Potatoes)

 

Ingredients Serves (3-4)
Beaten rice (medium thickness)   2 cup
Turmeric powder   ½ tsp
Sugar   1 tsp
Salt to taste    
Purie desiccated coconut   ½ cup
Potatoes   2
Oil   2 Tbsp
Mustard   1 tsp
Cloves   2
Cinnamon   2 pieces
Green chillies   3, slit
Curry leaves   few
Onion   1 cup, finely chopped
Coriander leaves   2 tbsp, chopped
Lime juice   To taste

 

 

Cooking Method

Soak the beaten rice in water till it is soft, but not mushy. Gently squeeze out excess water and spread the beaten rice in a wide plate. Sprinkle with turmeric powder, sugar and salt.

Sprinkle ¼ cup of warm water on desiccated coconut and leave aside for 10 minutes.

Boil, peel and cut potatoes into small cubes and sprinkle with salt to taste.

Heat the oil in a kadai and season with mustard, cloves cinnamon. Add green chillies and curry leaves, fry for few seconds. Add onion and fry till light brown.

Add beaten rice, potato and desiccated coconut. Mix well, cover and leave on low heat till heated through. Mix in lime juice and garnish with coriander leaves.
